How about something to wash down your Almost Paleo Cookies? All the tastes of eggnog goodness without the lactose and processed sugar. The hint of cinnamon and use of maple syrup, makes every sip of this eggnog rich and delightful.
The recipe is "paleo-friendly" hence the no booze, however we've included a recomendation for alcohol if you feel like spiking it.
Yield: 6 servings
1 can (full fat) coconut milk
1 cup almond milk
4 organic egg yolks
2 tablespoons real organic maple syrup
1 teaspoon cinnamon
½ teaspoon allspice
Optional: add bourbon, cognac or dark rum. The booze takes it out of the Paleo-friendly zone.
In a saucepan over medium heat, bring the coconut milk and almond milk to 160 degrees. Do not bring to a full boil. Then remove from heat.
Whisk the egg yolks in a medium bowl until they’re light yellow. While whisking, very slowly add ½ cup of the warm milk to the eggs. (By slowly adding the milk, you won’t curdle the eggs.) Continue the process until all the milk mixture is fully incorporated.
Bring to room temperature, and then place the eggnog in the fridge. Cool completely.
Pour the eggnog into a blender, and add the maple syrup, cinnamon and allspice. Blend until frothy. Divide into glasses and serve.
